Roasted Blueberry Ricotta Crostinis

Have you ever been asked to bring a dish and you feel like you may have too much fun that day or the day before to actually use your head to make something?  Welp, that was me!  I had plenty going on the other weekend, but I didn't want to disappoint my new found cook inside me, so of course I couldn't say no and now I've committed to cooking something.....and I'm tired, like really tired.  I had stumbled across this recipe that looked seriously easily, fast and I knew what all the ingredients were off the bat.  SOLD!

I was off to make Roasted Blueberry Ricotta Crostini.  First up, roasting the blueberries.  I didn't even know people ate roasted blueberries?  Did you?  It's pretty simple, lemon juice and honey and toss.

After tossing, put them on a baking sheet and stick them in the oven for about 10 minutes or until they look like they are going to pop.  They look like they're oozing when their done.


When they are done, they look like this on the baking sheet.  Part of me wishes I was putting them in a dessert instead of an app.  So far so good...and easy!


While the blueberries were roasting and becoming deliciousness, I sliced up a nice baguette.



Once sliced, into the oven to toast.  Gosh darn toasted baguettes are yummy.  Plain, with butter, cream cheese, biscoff, anything!  I could just sit and eat forever!


While you let the blueberries and crostinis cool, mix 1 cup of ricotta cheese, lemon juice and lemon zest in a bowl.


Once mixed and everything has cooled, spread the cheese mixture over the crostinis and then top with roasted blueberries and then a drizzle of honey.  The finished product came out looking super yummy........


Unfortunately, they weren't as good as they looked.  They were very bland...they need some more seasoning in the cheese mixture.  I definitely liked the concept, but they need something else!  If you decide to make them and add in a little more flavor, let me know what you add and how they taste.

They goodness they were going to my mom's house, where we had an amazing dinner of grilled shrimp skewers, roasted veggies and brown rice to make up for the hole of hunger in our stomachs.
