Crockpot Tacos

Yesterday, during the day while I was at work, I was also making Crockpot Cheddar Beer Chicken Tacos.  (I love accomplishing two things in different places at the same time.)  YUMMY!  This recipe was so easy.....throw into the crockpot 4 chicken breasts (raw), pour in some beer and toss in your mixed seasoning and turn on the timer.  Voila!  Personally, I like really easy crockpot recipes because I do them before work and I don't have time to brown or pre-cook anything.  Doesn't that defeat the purpose of using the crockpot?!?!?

I'm still learning (and trying to remember) to take more pictures.  So unfortunately the only picture I have is of the chicken after I shredded it, which was super easy b/c it was so moist.


The only change I would make in the future is to pour in maybe another 1/4 cup of beer so the chicken is a little more moist, and keep at cooking on low for 8 hours.  When you shred the chicken, it really does soak up all the remaining seasoned beer juice, but I would like a little more I think. 

I had my mom and Bruce over for dinner and sat up a taco bar.  I had either Fresh & Easy Multigrain Tortillas or F&E Cilantro-Jalapeno Corn Tortillas.  I had one of each.  For toppings I had cabbage, tomatoes, onions, cilantro, mixed shredded Mexican cheese, and an array of salsas.  Our taco bar went great with red wine also, as everything goes well with red wine.  We really enjoyed ourselves.

  1. I forgot 2 things - 1. I didn't add more seasoning because I thought it was very flavorful as it was, but just take a couple bites and see what you think. 2. I had cheese as a topping, but didn't add it to all the chicken as the recipe suggests. I wanted to also have a healthier option.
