Quick Spinach Burger

Kevin and I both got home a little late last night after visitng some friends who happened to be in the neighborhood.  I was planning on cooking vegetable tacos, but we went with a recipe that looked a little quicker and easier (about 1/3 of the ingredients).  We made a GREAT choice! 

I made Spinach Feta Turkey Burgers.  With only 5 ingredients, it doesn't get much better.  The recipe calls for 1 pound of ground turkey, but I wasn't paying attention and accidentally used 1.25 pounds.  I guess you could say that the burgers probably just weren't as cheesy and didn't have as much spinach in each.  But they came out awesome!!  I will definitely be making these a lot in the future.

The recipe calls for 4 burgers, which is what I made with the additional meat.  They came out really thick, but were also very good and very filling.  In the future I would probably use the same amount of meat (it's the size of the package so it's easier than weighing out 1 pound) and just make more patties that are smaller, or just keep them nice and thick.  If you eat them without a bun, I think they are definitely better thick. 

I didn't want heavy bread and spreads, so to keep it on the lighter side, I paired it with a toasted english muffic and some non-fat greek yogurt as my spread.  This is the first time I've ever used yogurt in replace of something and it worked great.  The slight sweetness of the yogurt really added to the burger.  I also did not top my burger with additional cheese as the recipe suggests.  I could eat these for the whole week.

Kevin even enjoyed these healthy burgers!  BUT, he ate his much differently than I did.

He cut is turkey/spinach patty to fit on some amazing white bread (from JJ's) that we have and he added thousand island dressing, mustard, pickles and pastrami!!  I don't care for pickles or mustard but I had to try this sandwich and it was spot on!  I probably could have eaten the whole thing.


You're probably wondering why pastrami?!?!?  Well, there is a jewish deli in north Scottsdale by my mom's house that has the most amazing pastrami......JJ's Delicatessen.  My mom and Bruce were coming home from AZ on Monday and offered to pick up some stuff from the deli for Kevin.  This is also where the yummy bread came from.  Of course Kevin's dinner had to include his fresh pastrami so he just piled it on......GREAT move Kev because that sandwich was delicious.
